Three Easy (And I Mean Easy!) Meals for Busy People!

Tired of searching the web for easy meals and finding ingredients you’ve never heard of? Maybe you are just starting out in the kitchen, and you need some good meals that take little time and prep work.

These three meals are favorites of my family, and really help during busy times.

Chicken Finger Wraps for 4

4 Whole Wheat Tortillas

8 chicken fingers

1 head romaine lettuce

1 1/2 cups cheddar cheese, grated

2 tomatoes, sliced.

Ranch dressing

Bake chicken fingers as directed on packaging.  Place Tortilla on a plate and top it with lettuce, cheese and tomato.   Place two chicken fingers on top of all that, and pour on some ranch dressing.  Roll it up and enjoy!  

* Serve with your favorite side

 

Chicken/Turkey Leftover Quesadillas 

4 whole wheat tortillas 

2 cups shredded cheddar cheese

1 cup salsa

1 1/2 cups broken up leftover chicken or turkey 

 

Preheat oven to 400 ‘F or 200 ‘C.

In a medium bowl, mix together, cheese, salsa and cooked chicken/turkey.

Place 2 tortillas side-by-side on a large non-stick baking sheet (you can use 2 separate smaller sheets).

Top tortillas with mixture and place remaining tortillas on top of filled bases (like a sandwich), and press lightly together.

Bake, turning once, for 5 minutes per side, or until crisp to your liking.

Cut your cooked Quesadillas into 4’s and serve with salsa and sour cream!

* spice up your Quesadillas with cajun seasoning or add cooked black beans to your mixture!

 

Whole Wheat Mini Pizza

2 whole wheat pitas (large)

1 can pizza (substitute with pasta sauce)

1 1/2 cups of your favorite cheese (shredded)

…and whatever you like on your pizza!

Preheat oven to 350 ‘F or 200 ‘C

Spread pizza sauce evenly over pitas, sprinkle with shredded cheese, add your favorite toppings and top with more cheese.

Bake on non-stick baking sheet for 20 minutes, or until crisp and melted to your liking.  Makes 2 pizzas.  Enjoy!
