Tuna Jack Quesadilla

A quesadilla makes a great lunch or a tasty appetizer to serve before your main entree. They are easy to make and they are fun to eat. This is my own creation and it came out really well. I was going to make toasted tuna rolls for lunch and found my rolls had molded but I had tortillas so I got creative and these are so good I just may give up toasted tuna rolls. The only real changes I made was I used tortillas instead of a roll and left out the mayonnaise. It is simple, easy and good. You can use whatever cheese you like but I like Pepper Jack or Cheddar with Tuna. The compliment each other well.

TUNA JACK QUESADILLA

 

In a small mixing bowl combine

1 – 5 oz cans solid white tuna; drained and flaked

2 Tbsp. finely chopped cucumber

1 Tbsp. finely chopped onion

1 Tbsp. finely chopped celery

1/8 tsp. cayenne

Mix well to combine

Divide tuna mixture evenly spread over 2 – 8” flour tortilla topped with shredded or thin sliced Pepper Jack cheese

Top tuna layer with thin sliced fresh tomato and another layer of Pepper Jack cheese

Place another flour tortilla on top

Grill 3 to 4 minutes on each side or until cheese is melted and tortilla is a light golden brown.  Remove to plate and cut into wedges.  Serve with salsa and sour cream and a green leafy salad on the side.

    I never thought of tuna as a quesadilla filling, but this sounds tasty.

    Now this sounds great. Quick, easy, fun… my kids will love it. My 6 yr old always wants tuna. Nifty to find a new way to use tuna.
