Tuna Stuffed Tomatoes

Recipe for stuffed tomatoes. I love this simple recipe for holidays as well as get togethers. It is fast and easy to prepare.

1 can of chunk light tuna in water

1/2 cup chopped celery

1/2 cup miracle whip or mayonnaise

1/4 cup chopped parsley

2 tablespoons green onion-minced

1/8 to 1/4 teaspoon black pepper

30-40 cherry tomatoes

Drain the tuna and set aside.  Mix mayonnaise or miracle whip, chopped parsley, minced green onion, and black pepper together. Add tuna and stir until well mixed and set aside.  Cut the tops off the tomatoes and scoop out the seeds.  Don’t forget to turn the tomatoes upside down on a paper towel and let drain.  Fill the cherry tomatoes with the tuna salad.  Put tomatoes in the refrigerator to chill. 

This is a fast and simple appetizer and is a hit at the holidays.
