A Lazy Easy Snack
A quick way to have a light lunch and get at least one portion of your five a day.
A few years ago I went to a by election in Leicestershire, and as usual we went into a local pub for lunch and a break from delivering.
I was surprised that there was very little choice for vegetarians on the menu, and the one thing that stood out was not something I would have normally chosen.
It was a toasted baguette, filled with mushrooms, peppers, onions, olives and cheese, served with a side salad and crisps.
I was amazed at how much I enjoyed it. Looking back, it could easily be described as a small vegetarian pizza, but there is something about it that makes it seem totally different.
When I make it at home, I mix the cheese in, but just add it on top of the hot ingredients that have been placed on the baguette. It just gently melts, rather than totally mixes with the other ingredients.
As well as being a quick choice when you are in a rush, it is also amazingly comforting when you are cold and feeling a bit under the weather.
Just a tip - don’t use a good cheese, as its also ideal for when the cheese starts to go a bit hard.
