Almond Clusters

These are unusual exquisite biscuits that will make you look like a genius. Everyone will want to know how you achieved this special texture.

Ingredients:

  • 500g almonds
  • 10 egg whites
  • 670g ordinary sugar
  • 2 tablespoons mixed spices
  • one-and-a half teaspoons vanilla

Method:

  1. Toast almonds in oven at 180c, 20-30 mins, or till softened.
  2. When cool, crush half the almonds like fine breadcrumbs and the other half like large
    rice grains, in a strong plastic bag using a heavy instrument, like a meat mallet.
  3. In a plastic bowl, beat the egg whites till stiff.
  4. Slowly fold in almonds, sugar, spices and vanilla.
  5. Put mix in heavy saucepan over low heat, stirring constantly with a wooden spoon
    for about 30 mins.

  6. Cool
  7. When cold, place tablespoons of mix on greased oven tray at 180c till they feel crispy on top, 40 mins.
  8. When totally cold, pack in plastic bags.
  9. Makes about 40.
