Almond Clusters

These are unusual exquisite biscuits that will make you look like a genius. Everyone will want to know how you achieved this special texture.
Ingredients:
- 500g almonds
- 10 egg whites
- 670g ordinary sugar
- 2 tablespoons mixed spices
- one-and-a half teaspoons vanilla
Method:
- Toast almonds in oven at 180c, 20-30 mins, or till softened.

When cool, crush half the almonds like fine breadcrumbs and the other half like large
rice grains, in a strong plastic bag using a heavy instrument, like a meat mallet. - In a plastic bowl, beat the egg whites till stiff.
- Slowly fold in almonds, sugar, spices and vanilla.

Put mix in heavy saucepan over low heat, stirring constantly with a wooden spoon
for about 30 mins. - Cool
- When cold, place tablespoons of mix on greased oven tray at 180c till they feel crispy on top, 40 mins.
- When totally cold, pack in plastic bags.
- Makes about 40.
