How to make your very own scrumptious cheddar biscuits and save money.

Here’s a nifty recipe for those who would rather make their own cheddar biscuits from scratch rather than use brought ones or the refrigerator biscuit varieties. You can take my word for it they are a lot easier to make than you might believe.

Ingredients:

  • 2 Cups of All-Purpose Flour (unbleached or regular)
  • 1 Cup of Grated Cheddar Cheese
  • ½ to ¾ Cup of Milk
  • 1/3 Cup of Cold Butter
  • 2 Tablespoons of Canola or Vegetable Oil
  • 1 Tablespoon of Ground Sea Salt
  • 3 Teaspoons of Baking Powder

Method:

  1. Preheat oven to 400 degrees F
  2. Cut the butter into chunks
  3. Using a large bowl, add in the flour, the baking powder and the salt and then whisk until these ingredients are well and truly evenly combined. Then add the butter chunks and then use a pastry cutter or two knives to cut the butter into the flour mixture until it is coarse, pea-sized will do fine as it doesn’t have to be ultra fine.
  4. Now add the oil and grated cheddar cheese and give the mix a quick stir. While continually stirring begin to add the milk a little at a time. Continue stirring and adding milk until the dough is just moistened and no longer dry and powdery. The idea is to get the dough just moist enough to hold together but not sticky.
  5. Now take a baking tray and spray very lightly with non-stick cooking spray (and I do mean very lightly). Divide dough into ¼ cup sized chunks and place onto baking sheet. Using an ice cream scoop is an easy way to do this.
  6. Put tray into preheated oven at 400 degrees F for approximately 15 to 20 minutes depending upon your oven

Serving:

These portions will yield approximately one dozen biscuits. Serve cheddar biscuits warm with butter and honey or jam. You can even use a little garlic butter and serve them as accompaniment to a soup. They do go down really well with a thick pumpkin soup or a nice spicy tomato soup.

If these cheddar biscuits are intended to be eaten cold at a later time place the cooked biscuits onto a wire rack and cover with a slightly moist tea towel the moment they come out of the oven. Let cool for a while and then lightly dust with plain flour to give them that authentic “bakery” look.

Then serve with butter and spreads alongside a cup of coffee or tea. Enjoy!!
