Eggy in a Cup

There’s nothing to it and nothing better served with it than hot buttered toast soldiers. No need for a knife and fork for this one but you’ll need a spoon to mix the Eggy in a Cup!

This is a treat often enjoyed by children – they can help make their own.

Ingredients

  • Eggs
  • Butter

Method

Softly boil 1-2 eggs per person.  They will be served in mugs so have these warmed and ready.  Take the heads off the eggs and scoop out the whole egg or eggs and place them in the mug or mugs.  Add a knob of warmed butter to each mug.  Put a fork (or spoon if it’s for a younger child) into the mug of eggs and butter – the diner has to mash them together. 

Serve with lots of hot buttered toast.  You can either spread your mug’s contents onto the toast and eat or cut the toast into soldiers and dip into the mug – there is no set rule but you should use your hands – knives and forks are not necessary.  This is real comfort food.
