Healthy Honey Flapjacks

A perfect snack for picnics or packed lunch boxes.

Ingredients

  • 100g/4oz  plain flour
  • 150g/8oz rolled oats
  • 100g/4oz granulated sugar
  • A pinch of salt
  • 100g/4oz butter or sunflower margarine
  • 2 tblsp. runny honey
  • 1 tblsp of golden syrup
  • 1 teaspn. bicarbonate of soda

Method

  1. Pre-heat oven to 350f / 180c / gas 4
  2. Grease a 20cm by 20cm tin    (Recipe makes approx. 16 pieces)
  3. Place the flour, oats sugar and salt in a mixing bowl and stir well.
  4. Melt the honey and butter over a gentle heat.
  5. Allow to cool slightly then add bicarbonate and stir through.
  6. Gradually pour the mixture into the bowl with the dry ingredients and mix well.
  7. Place mixture into greased baking tray lined with greaseproof paper, spread evenly and press down lightly.
  8. Bake in a pre-heated oven for approximately 15 minutes or until golden brown.
  9. Leave in the tray to cool for slightly then mark into portions and move to a wire cooling rack.
  10. Stored in an airtight tin these will keep for one week, but I bet you can’t resist them for that long.
