My daughter is the quintessential popcorn lover and this recipe came from her love of caramel corn and the difficulty of finding it in our small community. As a mom in a hurry most of the time, the quick and ease of making this is a dream come true and you too can enjoy it after this presentation.

First, we’ll start with the ingredients. You’ll need a microwave for this project (no stove or oven necessary!). Furthermore, to make this an even faster and easier process gather all the items needed and place on the counter within reach.

Ingredients

  • 16 c popcorn (3/4 c unpopped)
  • 1 c brown sugar
  • ½ c light corn syrup
  • 1 stick margarine or butter
  • ½ t salt
  • 1 t vanilla
  • ½ t baking soda

Method

Place popcorn in a large, microwaveable bowl and set aside. Next, combine the brown sugar, corn syrup, margarine or butter, and salt in an eight cup microwave bowl or glass measuring bowl. Microwave on full power for 2 minutes. Stir well and microwave an additional 3 minutes, stirring after each minute. Add vanilla and baking soda. Stir well and pour over popcorn. Microwave for 3 minutes, stirring after 1 and 2 minutes, then at 30 seconds. At end of time, stir and pour onto foil and cool. Store in airtight container or ziplock bag.
