Mexican Rarebits

The mexican style of rarebits.
Ingredients
Toast
- 10-15 slices of bread
- A little butter
Filling
- Peas 21/2 cups.
- Cheese 3 cubes – grated.
- Onion 1 chopped.
- Small piece ginger – chopped.
- Green chilies.
- Coriander.
- Salt and pepper to taste.
Method
Toast
Remove the crust from the bread slice. Roll out a little and press into the cavities of a muffin tray which is greased with the butter. Brush with melted butter and bake in a hot oven at 450 degree F (220 to 230 degree Celsius) for 10 -12 minutes. This was for the toast.
Filling
Boil peas and mash them. Add all the other ingredients of the filling and mix well. Fill this mixture in each case. Put tomato sauce on top and sprinkle cheese on each of them. Then again bake in a hot oven at 400 degree F for 5 – 10 minutes or until the cheese melts.
