Microwave Pita Pizzas

Simple recipe for pizzas made with pita bread.

Although one can buy all the ingredients to make a pizza, the dough has always been the problem. Pizza crusts are sold today, but I find using pita bread gives you that perfect size and flavour and the ‘options’
for pita bread has lots of uses and won’t be sitting forever in the fridge/freezer because no one feels like
pizza this fortnight.

Begin by cutting the pita breads in half and freeze them.

They should be fresh, if purchased frozen, thawed so as to be soft enough to cut in half.
Cut them, place them back into the plastic they came in, inside of another plastic and into
the freezer.

Pita bread lasts a very long time when frozen.

Ingredients

One half pita bread
Capful of Olive Oil
About a table spoon of Tomato Sauce
pinches of garlic powder*
pepe russo*
basil*
*whatever you like.
Additions…olives/mushroom whatever you like
About a table spoon of mozzerella cheese
About half table spoon of Parmesan cheese
(eye judge how much you are putting on…don’t cover every corner

Method

Place your half pita on a microwave plate.
Use real olive oil.
Beginning at the edges, going around and in.
You use the bottom of your spoon to smear it.

The next step is the most essential; the Dust.
The taste of a pizza depends on it’s “dust”.
These are various seasonings which turn melted
cheese into special.

I use garlic powder, purchased Italian seasoning, basil, and pepe rosso.
But because I like pepper, I use jerk seasoning.
You use what pleases your taste

Put powdered seasoning into a cap and take it up with your fingers
in pinches and sprinkle, starting from the edge, working in.

You want the pizza full of the seasoning, so that there are not singular taste spots.

The next step is the sauce.

Again, begin at the edges, going into the center.
Don’t cover the pizza.
Make sure that there are swirls of sauce and no spot looks bald.

Now for your ‘additions’…

I use black olives and mushrooms, you use what you like,
from cut up tomato and onion, the possibilities are endless.

As the pizza is small, don’t use large pieces or too much
of any one thing.
Less is more in this situation.
Place your additions from outside in.
You want to make sure the pieces are placed artfully.

Now your cheese.
Careful place thin slices or grated cheese from outside in.
Remember they will melt.
Do not use a lot. 
This makes for a gluey awful tasting virtual cheese mess.
You need to use a little less than you think you should.

Sprinkle the cheese on, leaving space.

Nuking

Now put the pizza into the micro at high for four minutes.

When the bell goes, let the pizza sit for about half a minute,
then remove, cut into slices, separate,  let cool for about a minute.

You have handy tasty bites, which are absolutely delicious!

The crust is thin, as it is only half a pita bread.

As you may note, I do not use salt, and for strict vegans,
vege cheese is the cheese.

These pizza make great lunches and there should be no left overs.
