Try this easy ‘no-cook’ recipe for snack bars, ideal for picnics or lunch boxes.

Ingredients

  • 100gms. butter
  • 100gms soft brown sugar
  • 125gms golden syrup or honey
  • 100gms dried fruit (sultanas, raisins. chopped dates,apricots)
  • 100gms rolled oats
  • 50gms chopped nuts
  • 50gms rice krispies
  • 50gms pumpkin seeds
  • 25gms dark chocolate, chopped.

Method

Melt butter,sugar and syrup or honey in a small pan over low heat. When melted bubble briskly for two minutes. Allow to cool a little then stir in all other ingredients, the chocolate last. Spread mixture into a greased baking tray approx.25cms X 15cms. Press down well. Leave in a cool place for several hours then cut into bars. Store in an airtight tin or wrap each bar in foil or clingfilm.
