Parsnip and Potato Cakes

Ingredients

  • 8oz cooked parsnips
  • 8oz boiled potatoes
  • salt and pepper (seasoning)
  • pinch of brown sugar
  • 1 egg yolk
  • 1tbsp thin cream
  • 1tbsp chopped parsley
  • egg and breadcrumbs for coating

Method

Run the parsnips and potatoes through a sieve. Add seasoning, sugar and , parsley, and bind with egg yolk and cream. Shape into rissoles, coat with egg and breadcrumbs and fry in hot fat until crisp and golden.

Note- These are very good served with grilled rashers of bacon.
