Pineapple Vegetarian Cheese Ball

A light version of an old favorite.

All of these recipes come from the mind and vault of Executive
Chef Lauren.

(Serves 30-34) Prep Time 10 Minutes

Ingredients:

  • 2 (8 oz) packages of cream cheese room temperature
  • 1 cup chopped pecans
  • 1 (8 oz) can of crushed pineapple, drained
  • ¼ cup red bell pepper chopped
  • ¼ cup green pepper chopped
  • ¼ cup minced onion
  • 1 tsp chopped fresh cilantro

Method:

  1. In bowl, mix together cream cheese, pecans, peppers, onion, cilantro, and pineapple.
  2. Refrigerate 2-4 hours.
  3. Shape into 1 to 3 balls depending on your preference.
  4. Wrap and chill until serving time.
  5. Before serving roll in pecans or parsley depending on your preference.
