Tapas: Fried Bread and Chorizo

A very basic Spanish appetiser, Fried Bread and Chorizo goes together quickly for a delicious treat.

Note: The chorizo used in Fried Bread and Chorizo is the Spanish type, which is like a salami.

 Spanish Chorizo

Ingredients

  • 7 oz Spanish-type chorizo, casing removed
  • 4 thick slices of day-old bread
  • olive oil for frying
  • 3–4 cloves of garlic, minced
  • 2 tbsp flat-leaved parsley
  • Spanish paprika

Method

  1. Slice the chorizo into 1/2-inch pieces. Cut the bread into 1/2-in cubes.
  2. Heat oil in a heavy frying pan and fry the garlic until just browned. Add the bread cubes and fry until golden brown. Continue frying and add the chorizo. Cook for a minute or two to heat through. Remove and drain  the bread and chorizo.
  3. Heap the bread-chorizo mixture in a warmed serving bowl. Scatter the parsley and a little Spanish paprika over the top. Serve the Fried Bread and Chorizo with toothpicks so guests can spear one bread cube and one slice of chorizo.

    Yes indeed. Took 3 tries to get them to put it into the correct category LOL!
