Tomato Bruschetta – mouthwatering dish just made for you.

Tomato Bruschetta

 

Prep: 10 minutes

Grill: 2-3 minutes

Makes: 4 servings

 

1 small baguette or ciabatta (French or Italian bread ‘stick’, or use a submarine loaf or regular brown bread slices)

1tbsp black olives, ground to coarse paste, salt to taste

3 large ripe tomatoes, diced small

1tbsp good extra virgin olive oil

10 basil leaves (or 11-12 leaves basil, or 1tbsp crumbled dried oregano or pizza seasoning)

 

1. Preheat the grill or oven to 220 degree C (425 degree F).

2. Split the bread loaf in half lengthways, and then halve again widthways to get four long slices. Toast lightly on both sides.

3. Spread each slice of bread with olive oil. Grill for 2-3 minutes more, until the tomatoes and warmed through.

4. Tear up basil leaves and sprinkle over; serve immediately.
