Vegetarian Tortilla

A simple vegetarian dish that kids love. This is a meal that brings the family together.
Hot Bean Mix
- 8 large Tortillas
- ½ cup cooked Red Kidney Beans
- ½ cup cooked Haricot Beans
- ½ cup cooked Garbanzo Beans
- 1 tbsp Olive Oil
- A small piece freshly chopped ginger to taste
- 2 cloves crushed Garlic
- 4 small tomatoes
- 1 pkt Old El Paso Taco seasoning mix
- 1 cup Water
- Heat oil in pan, add all the beans
- Add freshly chopped ginger, chopped tomatoes and garlic
- Cook thoroughly on medium heat for 5-10 minutes
- Add taco seasoning mix and water
- Simmer further 5-10 minutes
Place in a large serving Bowl
While this is happening prepare small bowls of fresh, raw vegetables such as sliced cucumber, sliced tomato, sliced avocado, washed lettuce and grated cheese and carrots.
Heat 8 large tortillas in microwave and serve immediately
I will serve this with a bowl of mushrooms cooked in butter too.
This is an excellent way to introduce new foods to children. Serving vegetables in small dishes where children can select and sample different or new foods in an unthreatening fun way is a good way to get fussy eaters to be more adventurous. They will be able to try foods that they have not tried before.

Yummmmmmmm! Since getting out of the hospital at first I couldn’t eat and now that I have my appetite back theres things I can’t stomach any more. Who knew the pancreas did so much!! But a girl can think about it! Anyway my husband does the cooking now and there’s no bells and whistles on it. He doesn’t know how to cook from a recipe. If I showed him a recipe that I felt like eating he would tap me on my head and call me a cheeky hound! Now you have made me hungry Lucy! LOL.

Now that I cant eat them beans and all the fixins look so good. I have to stick to my celery, plain macaroni, cabbage and a few others now,but I look forward to the future when I can eat all the good stuff.
