A review of Amish bread for the bread machine.

Amish Bread Recipe

Ingredients

    * 2 3/4 cups bread flour

    * 1/4 cup canola oil

    * 1 teaspoon active dry yeast

    * 1/4 cup white sugar

    * 1/2 teaspoon salt

    * 18 tablespoons warm water

Directions

   1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select White Bread cycle; press Start.

   2. When the dough has raised once and second cycle of kneading begins, turn machine off. Reset by pressing Start once again. This gives the dough two full raising cycles before the final raising cycle prior to baking.

Review:

I placed the ingredients into my bread machine in this order: water (2 cups plus 2 tablespoons), oil, flour, sugar, salt and then yeast.

I baked it on a basic bread setting and at a light setting; medium was a bit too dark for me. I did not double any cycles.

The bread has a good consistency, a slight sweet taste and works well for sandwiches. Toasting also works well.

I have found that fresh ingredients give a better result than some dated ingredients. My first attempt at this recipe actually yielded a dense, heavy small loaf of bread. I replaced all the ingredients needed and the second result was much better. A lighter loaf and of a larger size and it was not dense in comparison.

Overall I would recommend this recipe to friends. It is a good basic bread loaf I will continue to make. However, I will continue to search for another recipe for a bread with a bit more flavor to trade between it and this recipe when we desire a change.
