Apple Breakfast Bread

Since I like to cook as well I thought that give some recipes here would help people get a better snack!
enjoy.

(this was one of my first 100 recipes so it was added on about 3 times so enjoy)

(Also it is really good but for an even better apple breakfast bread i would consider adding a tiny bit more sugar and instead of 2 granny smith apples it wouldn’t hurt to consider adding 5 or 6 granny smith apples!, but it really doesn’t matter what apple you use but the yellow apples just don’t give the exact flavor and juiciness that the granny smith apples do but still it’s your choice not mine)

Apple Breakfast Bread 1 hr 20min         

Ingredients:

Topping:

1 tablespoon sugar

¼ teaspoon cinnamon

Bread:

2 ½ cups of all- purpose flour

½ cup sugar

2 ½ teaspoons of baking powder

½ teaspoons of baking soda

¼ teaspoon cinnamon

¼ teaspoon salt

1 cup low-fat buttermilk

¼ cup canola oil

2 large eggs

½ teaspoon vanilla extract

2 small Granny Smith apples

Directions:

1.    preheat oven to 375 F. Grease a 9 x 5- inch loaf pan with butter and insert parchment paper across the long sides and extending down a few inches

2.    For the topping in a tiny bowl combine the 1 tablespoon sugar and ¼  teaspoon cinnamon and set aside

3.     Into a large bowl, sift together the flour, ½ cup sugar, baking powder, baking soda, ¼ teaspoon cinnamon, and salt.

4.    In a smaller bowl, or right in the measuring cup, whisk together the buttermilk, oil, eggs, and vanilla.

5.    Peel 1 apple and dice into ½ – inch pieces to make 1 cup. Peel and quarter second apple and slice into about twenty- four ¼ inch-slices.

6.    Make a well in the flour mixture and pour in the buttermilk mixture all at once. Using a large spatula gently fold ingredients together. With almost combined add the diced apples. Do not over mix.

7.     Spoon the batter into the loaf pan and smooth the top with a spatula. Push the apple slices half way down into the batter working down the length of the loaf. Sprinkle with the topping mixture.

8.    Bake for 50 to 60 minutes or until a toothpick inserted in center of loaf comes out clean. Cool in the pan for 15 minutes, and then remove to a wire cooling rack.
