Apple-tapioca Pudding

This heavy pudding is a tasty occasional treat for those who are trying to gain weight. If you are not trying to gain weight you can also enjoy this occasional treat by substituting some of the ingredients with their less heavy counterparts.

 The Tapioca component in this recipe is Tapioca Flour which is high in carbohydrates which makes this recipe high in calories. Therefore this recipe is more suited for an occasional treat for those trying to gain weight, even though it includes apples with all of their health benefits, including the lowering of bad cholesterol because of its pectin content.

 

2 cups Fair Trade Organic Cane Sugar

1/2 cup Organic Butter

2 Free Range Chicken Eggs

2 Cups Tapioca Flour

1 tsp. Fair Trade Cinnamon

1 tsp. Ground Sea Salt

1 tsp. Baking Soda

4 Cups Peeled and Chopped Apples

½ Cup Fair Trade Organic Brown Sugar

½ Cup Walnuts Roughly Chopped, Fair Trade or Locally Grown preferred

I suggest that while you are preparing this recipe that you listen to the music album Desperate Straights by Slapp Happy/Henry Cow.

This is the type of tapioca most people are used to seeing.  Do not use this type. Use Tapioca Flour it looks just like plain white flour.

Preheat Oven to 325F/165C

Mix Brown Sugar and Walnuts together and set aside. Cream butter and sugar; add eggs and blend well. Sift together flour, cinnamon, salt and baking soda. Add to creamed mixture with apples. Mix. Put in 9 x 13 inch greased pan. Sprinkle the brown sugar and walnut mixture over the batter before baking. Bake 40 minutes.
