Apricot Upside Down Cake

Here is something yummy to do with dried apricots which are a good food for you!

1 cup dried apricot halves

1/2 cup warm water

1/3 cup butter

1/2 cup brown sugar packed

1/4 cup granulated sugar

3 Tablespoons white corn syrup

1 cup all purpose flour

1/4 teaspoon salt

1 1/2 teaspoons baking powder

1/4 cup shortening

1/2 cup granulated sugar

2 eggs

1/4 teaspoon almond extract

1/4 cup milk

Wash and soak apricots in the warm water for 30 minutes or longer. Melt butter in a square 8 inch square pan, add the brown and 1/4 cup granulated sugar, the corn syrup and 2 Tablespoons of water from apricots. Boil 2 minutes; remove from heat. Sift flour, measure, and resift 3 times with salt and baking powder. Cream shortening, blend in the remaining 1/2 cup sugar, add eggs and beat until fluffy. Add flavoring. Add flour mixture and milk alternately, beginning and ending with flour and beating well after each addition. Arrange apricot halves, rounded side down in syrup in pan, and spread batter over them. Bake in moderate oven (350F) about 35 minutes. Cool several minutes; loosen sides of cake and turn out onto saving plate. Serve warm with whipped cream desire.
