Banana Cake
So creamy, and light tasting. SO good with a little bit of powder sugar on for "snow." ONLY 3/4 Cup of sugar. LOW SUGAR CAKE! Kids will love!
Banana Cake
4 oz butter (softened)
3/4 Cup brown sugar
1 Large egg
3 bananas mashed about 3/4 cup worth
1/4 cup buttermilk or sour milk
1 teaspoon vanilla
1 1/2 Cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 scant teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
Directions:
Preheat oven to 350 degrees. And cook in a 8 inch square pan.
Beat Butter and brown sugar until creamy. Beat in egg, milk, vanilla, and mashed banana until blended. Then add all dry ingredients in then STIR (do not beat) in to wet mixture until just combined. Be careful not to over stir. Then pour batter into greased 8 inch pan and cook for 30 minutes in the center of the oven.
Last step:
Take out of over let it cool, cut into desired pieces and sprinkly a little “snow” aka powdered sugar on.
