Banana Doughnuts

Here is an extra yummy doughnut that is one of my favorite. These are better than a bakey ones.
Modern Family CookBook from the mid 60s when my parents got married. My mom’s first cookbook.
5 cups all purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons salt
1 teaspoon nutmeg
1/4 cup shortening
1 cup sugar
3 eggs, well beaten
1 1/2 teaspoon vanilla
3/4 cup mashed bananas
1/2 cup buttermilk
1/2 cup flour for rolling
Sift flour, measure and resift three times with baking powder, soda, salt, nutmeg. Cream shortening, blend in sugar, add eggs, and beat until smooth and fluffy. Add combined vanilla, bananas, and buttermilk and beat until well mixed. Add flour mixture and stir until smooth. Turn small portions of dough onto floured dough, knead lightly, roll to 3/8 inch thickness, and cut with floured 2 1/2 inch donut cutter. Fry in deep fat heated to 375F until golden brown, then lift out and drain on absorbent paper Makes 3 1/2 dozen. Hey, mom, aren’t you making any doughnuts for you =) THis isn’t even enough for me =)
