Banana Muffins

1 cup sugar
1/2 cup shortening
2 large ripe bananas
2 eggs
1 1/2 cup flour
1/2 teaspoon salt
1 teaspoon soda
Cream the sugar and shrotening until smooth. Beat eggs and mash bananas and combine these two. Sift 3 times the flour, salt and soda. Blend wet and dry ingredients, but do not overmix. Pour mixture into greased muffin pans and bake for 30-40 minutes, at 324*. For variety, use blueberries or apples in place of bananas, or add a tablespoon of orange marmalade or apricot jam to basic recipe. Chopped dates may also be added.
