Basic Bread: Dinner Rolls

Freshly-baked Dinner Rolls are a nice accompaniment to any meal. Even a beginner baker can make tasty Dinner Rolls without too much experience. Keep unbaked Dinner Rolls in the freezer to have hot bread any time.

Note: Yeast is a live organism and easily damaged. When starting Dinner Rolls, make certain the liquids used are warm and not too hot.

Ingredients

  • 1/2 c hand-warm milk
  • 1/2 c hand-warm water
  • 1 tsp salt
  • 1/4 tsp sugar
  • 1 tbs unsalted butter, softened plus more for the pan
  • 2 tsp dried instant yeast
  • 3 c AP/plain flour plus more for dusting
  • melted butter for the tops of the rolls

Method

Mix the milk, water, salt, butter and sugar into a large mixing bowl. Add the yeast and 1 cup of the flour. Stir well, cover and let rise for 30 minutes.

Add the rest of the flour. Knead well on a floured board until the dough is smooth and silky. Put back into the mixing bowl, cover and let rise until doubled in bulk.

Divide the dough into 24 balls*. Place the balls on two buttered baking sheets. Cover and allow to rise again until doubled in bulk.

Preheat the oven to 400 F. Brush the tops of the Dinner Rolls with melted butter. Bake the rolls for about 15 minutes, until golden brown. Allow to cool on wire racks.

*The Dinner Rolls can be wrapped airtight and frozen at this point. Allow them to thaw and rise before baking, while the oven is preheating.
