Berry Good Squares

Squares made with freshly picked berries.

In late Summer and early Fall, Newfoundlanders take to the 'barrens' in search
of partridgeberries and  blueberries. After a full day enjoying the great
outdoors, they usually arrive home with overflowing buckets of succulent
berries. You'll be sure to enjoy the 'fruits of your labour' with this popular
recipe for squares... which most Newfoundlanders agree are 'berry,berry' good. 

Preparation Time: 30 minutes
Cooking Time: 40-50 minutes
12 squares 

3 tablespoons butter
¼-½ cup sugar 

2 egg yolks 

½ - 1 cup flour 

1 teaspoon baking powder 

¼ teaspoon salt 

¼ cup milk 

¼ teaspoon vanilla 

Topping 

2 egg whites 

4-6 tablespoons sugar 

¼ teaspoon salt 

1 cup blueberries or partridgeberries 

Preheat oven to 350°F 

Grease 8 inch square pan (Pan size is important) 

Separate egg yolks from egg whites 

Cream butter and sugar until light and creamy. Beat in egg yolks. 

Sift together dry ingredients-flour,baking powder and salt. Gently pour milk and
vanilla alternately into above mixture. Spread evenly in greased pan. 

Bake at 350°F for 18-20 minutes or until the mixture springs back when touched.
Remove from oven and lower temperature to 300°F 

Topping 

Beat egg whites until peaked. Beat in sugar and salt stiff peaks form. Gentltly
pour in berries. 

Spread over cake and bake at 300°F until topping has browned
lightly(approximately 20-30 minutes) Serve Freshly made.
