Bacon Spoon Bread Recipe

Ingredients:

3/4 cup cornmeal
1 ½ cups cold water
8 ounces sharp natural Cheddar
cheese, shredded (2 cups)
1/4 cup butter, softened
2 cloves garlic, crushed
1/2 teaspoon salt
1 cup milk
4 well-beaten egg yolks
8 ounces sliced bacon, crisp-cooked and drained
4 stiffly beaten egg whites
Combine cornmeal and water; cook, stirring constantly, until the mixture is consistency of mush. Remove from heat. Add cheese, butter, garlic, and salt; stir to melt cheese. Gradually add milk. Stir in egg yolks.

Crumble bacon, reserving some for garnish; add to cornmeal mixture. Fold in egg whites. Pour into greased 2-quart souffle dish. Bake at 325 degrees until done, about 65 minutes.

Spoon into warm dishes; top with butter.

Serves 6.
