Black Olive and Feta Focaccia
Focaccia is a dense and chewy Italian flat bread. It is also commonly used as a bread base for pizza toppings.

When making homemade bread I always use my bread maker to mix the dough, but if you do not have one, just follow the recipe using traditional hand mixing and kneading.
Ingredients
- 1 tbsp White Sugar
- 2 cups very warm Water
- 1 pkg Dry Yeast
- 4 – 4 1/2 cups White Flour
- 2 tbsp Olive Oil
- 1 tsp Garlic Powder
- 1 tsp salt
- 2 oz Feta Cheese
- 2 oz Chopped Black Olives
- 1/4 cup (more) of Olive Oil
- 1 tsp Coarse Salt/ Sea Salt
Method
- In a small bowl, disolve sugar in warm water, then stir in yeast and let stand till frothy
- Put all dry ingredients into bread maker
- When yeast is frothy, turn bread maker on to the mix setting. Wait until it mixes a bit and slowly add in yeast mix.
- add in the 2 tbsp of olive oil.Continue letting the machine mix the dough
- When mix cycle is almost over, add in feta cheese and olives. (If dough is not form enough add a little flour)
- When cycle is complete, remove it from machine and put in an oiled bowl
- Cover with plastic wrap and set someplace warm until it has doubled in bulk
- Punch down the dough and separate into two equal balls.
- Roll out each piece into rectangles and place onto well greased cookie sheets
- Cover and let stand 15-20 minutes
- Press the end of a wooden spoon handle into dough to make several indents about 1/4 ” deep.
- Brush with the 1/4 cup of Olive Oil and sprinkle evenly with coarse salt
- Bake at 425* until crisp and golden brown.

I’ve never tried to make focaccia but this sounds really good and not terribly difficult to make. Thank you for sharing the recipe!
