Black Olive and Feta Focaccia

published by lanne on Nov 22, 2008

Focaccia is a dense and chewy Italian flat bread. It is also commonly used as a bread base for pizza toppings.

When making homemade bread I always use my bread maker to mix the dough, but if you do not have one, just follow the recipe using traditional hand mixing and kneading.

Ingredients

  • 1 tbsp White Sugar
  • 2 cups very warm Water
  • 1 pkg Dry Yeast
  • 4 – 4 1/2 cups White Flour
  • 2 tbsp Olive Oil
  • 1 tsp Garlic Powder
  • 1 tsp salt
  • 2 oz Feta Cheese
  • 2 oz Chopped Black Olives
  • 1/4 cup (more) of Olive Oil
  • 1 tsp Coarse Salt/ Sea Salt

Method

  • In a small bowl, disolve sugar in warm water, then stir in yeast and let stand till frothy
  • Put all dry ingredients into bread maker
  • When yeast is frothy, turn bread maker on to the mix setting. Wait until it mixes a bit and slowly add in yeast mix.
  • add in the 2 tbsp of olive oil.Continue letting the machine mix the dough
  • When mix cycle is almost over, add in feta cheese and olives. (If dough is not form enough add a little flour)
  • When cycle is complete, remove it from machine and put in an oiled bowl
  • Cover with plastic wrap and set someplace warm until it has doubled in bulk
  • Punch down the dough and separate into two equal balls.
  • Roll out each piece into rectangles and place onto well greased cookie sheets
  • Cover and let stand 15-20 minutes
  • Press  the end of a wooden spoon handle into dough to make several indents about 1/4 ” deep.
  • Brush with the 1/4 cup of Olive Oil and sprinkle evenly with coarse salt
  • Bake at 425* until crisp and golden brown.

I’ve never tried to make focaccia but this sounds really good and not terribly difficult to make. Thank you for sharing the recipe!
