Blackberry Mini Donuts, a Recipe for a Mini-donut Maker

I have fallen in love with my little Babycakes donut maker. My class and I have been having a great time creating healthy recipes that kids and adults will love. Here is my favorite for the summer so far.

Ingredients: 1/3 cup butter softened (or margarine, but better with real butter) ½ cup brown sugar ½ cup sugar 2 eggs, well beaten ¾ cup blackberries, mashed a bit (you could substitute blueberries or raspberries) ½ cup milk 1 cup white flour 1 cup whole wheat flour 2 teaspoons baking powder 1 teaspoon baking soda Directions: Beat in the softened butter, brown sugar and sugar together until well mixed, then beat in the eggs.  A fork is fine for this, but make sure you get an even consistency.  Beat in the blackberries and then the milk. In a separate bowl, mix the other dry ingredients together and then add the two mixtures together and mix to an even consistency. Each little donut maker cup should get about two tablespoons of batter.  It will take about four minutes to bake, and they should be a lovely purplish blue with a bit of brown crust.  A toothpick in the middle should come out clean.  Place to cool on a wire rack or a regular ceramic plate-not a paper plate as they could stick to the paper.  This should make about two dozen donuts.
