Blueberry Pancakes

Great for breakfast!

What you need:

1 egg

1 cup buttermilk

2 tablespoons oil

1 cup flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup blueberries (fresh are best,but

canned or frozen are fine,too.)

2 or 3 tablespoons margarine

How to make it:

1) Blend the egg,buttermilk,and oil together in a bowl.

2) Add all of the dry ingredients to the mixture. Stir until

well blended,but it’s okay if batter is a little lumpy.

 to 3) Fold in the blueberries.

4) Melt 2 to 3 tablespoons margarine in the pan or on the

griddle. Let the griddle get hot so margarine bubbles,

but not so hot that it turns brown or smokes.

5) Place spoonfuls of the batter on the griddle. Smaller

pancakes are easier to flip.

6) Cook evenly. When bubbles start to appear on the top,

and the bottoms are slightly browned,flip the pancakes with a spatula.

Makes about 10 pancakes
