Chapati

The splendid thing about Indian cooking is that most of the recipes can be prepared in advance and the dishes then heated just before servings without coming to any harm.

250g Wholemeal flour

1 teaspoon salt

200 ml water

Place the flour and salt in a bowl, Make a well in the centre, gradually stir in the water and work to a soft supple dough. Knead for 10 minutes then cover and leave in a coll place for 30 minutes. Knead  again very thoroughly, then divide in to 12 pieces. Roll out each piece on a floured surface in to a thin round pancake.

Lightly grease a griddle or heavy based frying pan with a little ghee or oil and place over a moderate heat. Adda chapati and cook until blisters appear. Press down with a fish slice, then turn and cook the other side until lightly coloured. Remove from the pan and keep warm while cooking the rest.

Brush a little butter on one side and serve warm
