Bread with Fruit and Nuts

It is the holiday season again. I thought I’d share a yummy recipe for the season.

3/4 cup sugar

1/2 cup butter, softened

2 eggs

2 1/2 cups all purpose flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 cup milk

1/2 of a jar of minceeat1/2 cup chopped nuts

Heat oven to 350 F.  Grease a 9×5x3 inch loaf pan.  Beat sugar and butter in a large bowl on medium speed, scraping bowl once in awhile, until light and fluffy.  Beat eggs in 1 at a tim, until blended. Stir in micemeat and nuts. Spread in pan. Bake until toothpick until the center comes out clean, 60-70 minutes. cool 10 minutes; remove from pan. Cool thoroughly before serving. Makes one 9×5 inch loaf.
