Ingredients

  • 1 tbs vegetable oil (additional if needed)
  • 1 or 2 fresh red chilis/chiles, seeded and chopped fine
  • 1 small clove garlic, minced or mashed
  • 1 1/4 c slightly warm water
  • 2 1/4 c unbleached white flour
  • 1 c whole wheat flour (or use all white flour)
  • 1 1/2 tsp salt
  • 1 1/2 tsp active dry yeast

Method

Heat the oil and saute the chopped chiles until soft. Add the minced garlic and cook for one more minute. Let cool for a couple of minutes. Add the chile-garlic mixture and the oil plus the water to the breadmaker pan. Mix the salt and flour and layer over the water. Then make an indentation in the flour and add the yeast.

Set the bread machine to the normal or basic setting, with medium crust. Adjust the flour or water as needed to get the correct texture.

At the end of the cycle, remove the Breadmaker Chili Bread from the pan while still warm and let cool on a rack.

To bake in the oven, mix the dough for the Santa Fe Chili Bread using the breadmaker. Let rise until doubled. Knead again, transfer to a greased loaf pan, let rise until doubled and bake at 400 F for about 50 minutes, until golden brown. Turn the heat down to 375 F if the bread gets too brown before it’s done.

Breadmaker Santa Fe Chili Bread freezes well, wrapped airtight.

Serve Chile Bread with Bean Stew, Peanut Soup, Glamorgan Sausages or Posole.

Don’t need a breadmaker for this. Will work just like ordinary bread.
