Brown Sugar Cinnamon NUT Bread

When I was in college, oh so many years ago, my landlady would quite often make this quick bread and have it waiting when I cam home from my afternoon class. We’d sit down together for tea and some of this delicious bread and discuss our day. When I left school she gave me her recipe for this bread. Here is how to make it.

BROWN SUGAR CINNAMON NUT BREAD

Preheat oven 375 degrees

Grease a 9” x 13” baking pan

In a mixing bowl sift together

2 1/2 cups sifted flour

1 1/2 tsp. cinnamon

1/2 tsp. salt

1 tsp. baking powder

1/2 teaspoon baking soda

Mix in

1 1/4 cups light brown sugar, firmly packed

Cut in

1/2 cup butter or margarine until mixture looks like coarse meal

Reserve about 3/4 cup of dry mixture for topping

To remaining dry mixture Add

1 egg, well beaten

3/4 cup soured milk Sour with 1 tsp. cider vinegar

1/2 tsp. vanilla extract

Beat until well blended

Fold in

2/3 cup chopped walnuts chopped medium fine

Spread batter in prepared baking pan and sprinkle with remaining dry ingredients (topping) over the top

Bake 30-35 minutes until done; toothpick inserted in center comes out clean

Remove from oven and cool on wire rack to room temperature.  Cut into squares and serve. This goes wonderful with apple or honey butter or a cream cheese spread or just plain butter.  It is wonderful with afternoon tea or as a breakfast bread but you can enjoy it any time of day you choose.
