Butterscotch Bars One with Coconut and Walnuts
This is another butterscotch recipe you are sure to love.
2 cups all purpose flour
2 teaspoons baking powder
1/2 cup vegetable shortening
2 cups packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup shredded coconut
1 cups walnuts, chopped
1. Preheat the oven to 350 degrees. Lightly grease a 13 x 9 inch baking pan.
2. Combine the flour and baking powder.
3. In a large bowl, cream the vegetable shortening and brown sugar. Beat in the eggs. Beat in the vanilla extract. Gradually blend in the dry ingredients. Fold in the coconut and walnuts. Spread the mixture evenly in the prepared baking pan.
4. Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean. Cut into large or small bars and cool in the pan on a wire rack.
