Butterscotch Refrigerator Cookies

Enjoy these extra yummy cookies. My mom has been baking our sweets lately and made these a few weeks ago. They were delectable! =)

My mom got this recipe from my favorite cookbook 1001 cookie recipes =) by Gregg R Gillespie

1 cup all purpose flour

1 package butterscotch pudding mix

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup at room temperature

2 Tablespoons light brown sugar

1 large egg

1/4 teaspoon vanilla extract

1. Combine the flour, butterscotch pudding mix, baking powder and salt.

2 In a large bowl, cream the butter and brown sugar (my favorite part!) beat in the egg. Beat in the vanilla extract. Gradually blend in the dry ingredients.

3, Form the dough into 2 log inches in diameter, wrap in wax paper and chill for 8 hours or overnight.

4. Preheat oven to 375 degrees. Lightly grease 2 baking sheets

5. Slice the log into 1/4 inch thick slices and place 1 inch apart on the prepared baking sheets

Bake for 8-10 minutes until firm. Transfer to wire racks to cool

    I’m not a fan of butterscotch but my roommate loves it….Maybe I will try this recipe and surprise him.
