Carrot Cake Recipe
CARROT CAKE RECIPE.
Ingredients
Yields approx. 1 Kg.)
140 gms. Brown Sugar
250 gms. Plain flour (Maida)
3 nos. Eggs
1 tsp. Baking powder
½ tsp. Soda-bi-carbonate
1 tsp. Ground cinnamon
¾ tsp. Ground ginger
¼ tsp. Ground nutmeg
120 ml. Vegetable oil
70 ml. Golden syrup (Dark corn syrup)
315 gms. Grated carrot
50 gms. Pecans or walnuts
Method :
Pre heat the oven at 170 degree Celsius.
Sift together the flour, spices, soda-bi-carbonate, baking powder into a large bowl and make a well in the centre.
Whisk together the oil, sugar, eggs and golden syrup with the help of an electric beater or mixer. Gradually pour into the well, stirring until combined.
Stir in the grated carrot and chopped nuts. Mix it well.
Grease the base of the cake tin or line it with non stick baking (butter) paper.
Spoon the mixture into the tin and smooth the surface.
Bake for about 1 to 1 ½ hours.
Insert a skewer or knife in the cake to see if done. The knife should come out clean.
