Carrot Spiced Muffins
A simple method for something so tasty and versatile can be an ideal addition to an Indian meal for example.
Ingredients
- 1 ½ cup Whole-wheat flour (Whole meal)
- ½ cup Yoghurt
- 1 tsp Baking powder
- 1 Egg
- ½ tsp Ground cinnamon
- ½ tsp Vanilla essence
- 1/8 tsp Ground ginger
- 1 ½ cup Grated carrot
- 1 tsp Baking soda (bicarbonate of soda)
- ½ tsp Salt
- ¼ Ground nutmeg
- 1/8 tsp Allspice
- ½ cup Raisins
- 1/3 cup Honey or brown sugar
Method
- Combine dry ingredients.
- Mix wet ingredients separately with carrots and raisins.
- Add wet to dry, stirring only until flour is moistened.
- Spoon onto a greased baking dish (allow room for growth) or into muffin moulds
- Bake 15 mins at 200oC (390F).
