Carrot Spiced Muffins

A simple method for something so tasty and versatile can be an ideal addition to an Indian meal for example.

Ingredients

  • 1 ½ cup     Whole-wheat flour (Whole meal)
  • ½ cup        Yoghurt
  • 1 tsp           Baking powder                              
  • 1                 Egg
  • ½ tsp         Ground cinnamon    
  • ½ tsp         Vanilla essence
  • 1/8 tsp       Ground ginger                              
  • 1 ½ cup     Grated carrot
  • 1 tsp           Baking soda (bicarbonate of soda)
  • ½ tsp         Salt
  • ¼               Ground nutmeg
  • 1/8 tsp       Allspice
  • ½ cup        Raisins
  • 1/3 cup      Honey or brown sugar

Method

  1. Combine dry ingredients.
  2. Mix wet ingredients separately with carrots and raisins.
  3. Add wet to dry, stirring only until flour is moistened.
  4. Spoon onto a greased baking dish (allow room for growth) or into muffin moulds
  5. Bake 15 mins at 200oC (390F).
  6. Simple as that

Makes 16-18 small or 12 large
