Chocolate Chip Muffins

No doubt about it chocolate chip muffins are an ever oh so easy to make comfort food that never fails to lift waning spirits. These easy to make fluffy melt in your mouth bundles of palate pleasing goodness certainly rank right up there.

Assorted Muffins

I have a batch of these chocolate chip muffins in the oven baking as I write this and the wonderful aroma that is filling the house at this very moment is making my mouth water in anticipation so without further ado here is the recipe.

Ingredients

  • 2½ Cups of All-Purpose Flour
  • 1½ Cups of Dark or Semisweet Chocolate Chips
  • 1 Cup Plus 2 Tablespoons of Sugar
  • ¾ Cup of Buttermilk
  • ½ Cup of Milk
  • 1 Large Egg
  • 6 Tablespoons of Butter
  • 2 Teaspoons of Baking Powder
  • ½ Teaspoon each of Baking Soda, Vanilla Extract and Freshly Ground Sea Salt

Method

  1. Melt the butter and then let it cool
  2. Preheat oven to 375 degrees F, set an oven rack to the center height and get a muffin tin ready. You can lightly grease the muffin tray with butter or oil. Using a non-stick cooking spray is also a very effective method.
  3. Preparation Notes – Alternatively; you might prefer to line the muffin tray cups with paper muffin cups or to even use a combination of methods. If using more than one muffin tin place one oven rack one third up from the bottom of your oven and another one third of the way down from the top of your oven. This is to ensure that both lots of muffins will cook at the same rate.
  4. Next up select a large mixing bowl and add in the flour, the sugar, the baking powder, the baking soda, the freshly ground sea salt and then thoroughly whisk them together
  5. In a medium sized mixing bowl add in the cooled melted butter, the buttermilk, the milk, the egg and the vanilla extract. Whisk these ingredients together until the mixture takes on a smooth texture.
  6. Now gradually pour the smooth liquid mixture into the dry ingredients mixture stirring as you do so. Continue stirring until no streaks of flour remain. Next up add the chocolate chips stirring all the while as you do so.
  7. Now that the chocolate chip muffin batter is ready you can begin to load it into the cups of your already prepared muffin tray. If you wish the muffins to rise above the muffin tray then slightly overfill each muffin cup.
  8. Once your muffin cups are loaded place the muffin tray into the oven and bake until the muffins become lightly browned (around 20 minutes depending upon your oven). To test as to whether or not your muffins are cooked simply insert a toothpick into the center of a muffin and then withdraw it. If the toothpick comes out clean your muffins are ready to go.

  9. Transfer muffins still in muffin tray to a wire rack to cool for a little bit and then remove the muffins from the muffin tray placing them onto the wire rack to finish cooling to the desired temperature ready for consumption

Serving

These portions will make around 12 absolutely delicious chocolate chip muffins that are an ideal accompaniment to a cup of milk, coffee, tea or hot chocolate etc. These chocolate chip muffins may be served slightly warm or at the ambient room temperature.

If you wish you can always pop these chocolate chip muffins into the microwave oven and quickly nuke them to warm them up. Nuking them also has the added benefit that the muffins will become “freshened up” which is a handy trick to increasing the shelf-life of most muffins.

For more pizzazz apply a simple brushed on sugar and water glaze after the muffins have been removed from the muffin tray. We often use a brushed on honey water glaze to give practically every type of muffin that intangible something extra. Many customers and staff alike inform us that whatever it was that we did to their muffins could we keep doing it.

Coating the tops of the muffins with a standard doughnut frosting/icing also increases demand for most muffins but the chocolate chip and triple chocolate muffins seem to benefit from this treatment more so than any others. Then again counter-top display and presentation also plays a big part here.

If you intend to include these chocolate chip muffins in with a cut lunch then it is advisable to use paper muffin cups to line the cups of your muffin tray. Wrapping them in plastic cling wrap will help keep them fresh until ready to be consumed.
