Christmas Recipes: Chocolate Chunk Raspberry Bars

These are great for Christmas which you should be planning what you want to bake because you don’t want to be baking midnight Christmas Eve=)

From Cookies and Sweet Treats

1/3 cup granulated sugar

2 Tablespoon butter

1 3/4 cups semisweet chocolate chunks, divided

1 egg

1 teaspoon vanilla extract

2/3 cup all purpose flour

1/4 teaspoon baking powder

1/4 teaspoon salt

1/3 cups seedless raspberry preserves

1/2 cups finely chopped nuts

Preheat oven to 350F Grease an 8 inch square baking pan.

In medium saucepan, combine sugar, butter and 2 Tablespoons water. Cook over medium heat, stirring constantly, until mixture boils. Remove from heatl; immediately add 1 cup chocolate chunks, stirring until melted.. Stir in egg and vanilla until blended.

In separate bowl, stir together flour, baking powder and salt. Add to chocolate mixture. Stir in remaining choclaote chunks; spread into prepared pan.

Place pan in freezer 10 minutes. Stir raspberry preserves to soften, spread over chilled batter. Sprinkle chopped nuts on top

Bake 35-40 minutes or until brownies begin to pull away from sides of oan. Cook completely in pan on wire rack. Cut into bars
