Christmas Treat for Santa Recipes!chocolate Chocolate Chip Bread

You can put this bread out for a party, or you can make it and it leaves a delicious treat that goes along great with milk for Santa. Don’t forget to make carrot cake for the reindeer =) I will see if I can find our carrot bread recipe and if you make it you’ll gets lots of great gifts fron Santa =)

Nonstick cooking spray

2/3 cup granulated sugar

1/3 cup prune puree [recipe follows]

2 egg whites1/3 cup semisweet miniature chocolate chip, plus 1/4 cup melted , divided

1/2 cup skim milk

1 teaspoon vanilla extract

1 1/3 cups all purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon baking soda

Preheat oven to 350F coat an 8 1/2 inch by 4 1/2 by 2 1/4 loaf pan with non stick cooking spray

In mixer bowl, beat sugar, prune puree, egg whites and 1/4 cup  melted chocolate to blend thoroughly. Gradually beat in milk and vanilla. In separate bowl, combine flour , baking powder and salt  and baking soda, stir into prune mixture , mixing just to nblend, Mix in remaining chocolate chips

Spoon batter into pans, level off top. Bake in center of oven40-45 minutes or until springy to the touch and toothpick inserted into center comes out clean. Cool in pan for five minutes, then turn out of pan onto rack. Cool completely before slicing



Combine prunes and 3/4 cup water in container of food processor, process about 1 minute , or until pureed. Puree may be covered and refrigerated up to 2 months.
