Cinnamon Rolls

2 packages active dry yeast

1 cup milk, heated to lukewarm

1 cup lukewarm water

1/2 cup sugar

1/3 cup shortening

7 cups sifted flour

2 eggs

1 teaspoon salt

Put yeast and lukewarm liquid in large bowl; let stand a few minutes. Add 1 tablespoon sugar and 3 cups flour; beat thoroughly, then add the sugar and shortening, well creamed. Add well beaten eggs and the salt, then add remainder of the flour gradually; enough to make a moderately soft dough. Knead well; grease dough lightly; cover and let stand in warm place to rise until light, about 1 hour. When light, cut in half. Pat or roll each piece in oblong shape. Spread with melted butter, sprinkle with granulated sugar, then with brown sugar and connamon (chopped walnuts, or pecans, if preferred). Roll up dough. Cut in slices 1/2 inch thick. Place in pans. Let rise until light, about 30 to 40 minutes and bake at 350 degrees 25 to 30 minutes.
