Cookie Recipes: Butterballs

My mom recently gave me all her recipes and I remember how good they taste so intend to share them with you. I will start with cookie recipes. Yum!

1 cup butter, at room temperatures

1/2 cup powdered sugar

2 cups all purpose flour

1 1/2 cups shredded coconut

powdered sugar for rolling

Preheat oven to 350F

In a large bowl, cream the butter and powdered sugar. Gradually blend in flour, fold in the coconut.

Break off walnut sized pieces of dough and roll into balls. Roll in powdered sugar and place 1 inch apart  on ungreased baking sheets

Bake for 18-20 minutes until lightly colored. Roll in powdered again and transfer to  wire racks to cool.

    Love coconut and these sound just wonderful…will have to try ASAP…
