Cooking Without Mom: Blueberry Muffins

A simple and easy way to make a tasty treat that anyone would love! Takes no time at all, and is healthy for you.

Ingredients

  • 500mL flour
  • 15mL baking powder
  • 2mL salt
  • 125mL sugar
  • 5mL lemon rind
  • 1 egg
  • 250mL milk
  • 125mL melted margarine
  • 250mL blueberries – fresh or frozen

Topping

  • 60mL melted margarine
  • 15mL fresh lemon juice
  • 75mL sugar

Method

  1. Preheat oven to 425°F. Lightly greas a 12 cup muffin tin. 
  2.  Mix together flour, baking powder, salt, and sugar in large mixing bowl and set aside.
  3. In medium mixing bowl, mix together egg, lemon rind, milk, and 125mL of melted margarine.
  4. Add blueberries to flour mixture, tossing to coat with flour and make a well in dry ingredients.
  5. Add liquid ingredients to dry ingredients and stir with a fork 12-15 times or until just blended.
  6. Spoon  into muffin tins, filling 12 cups.
  7. Bake for 20-25 minutes or until golden brown and a toothpick inserted in the centre comes out clean.
  8. Place 75mL of sugar in small dessert bowl.
  9. Place 60mL of melted margarine and lemon juice in a seperate bowl.
  10. Remove muffins from over, carefully loosen around edges. Immediatly dip tops into margarine micture, then into sugar.
  11. Cool on a cooling rack.

    Yum!, blueberry muffins, possibly the best muffins around. Will be trying this out, they won’t last long though :)
