Cooking Without Mom: Blueberry Muffins
A simple and easy way to make a tasty treat that anyone would love! Takes no time at all, and is healthy for you.
Ingredients
- 500mL flour
- 15mL baking powder
- 2mL salt
- 125mL sugar
- 5mL lemon rind
- 1 egg
- 250mL milk
- 125mL melted margarine
- 250mL blueberries – fresh or frozen
Topping
- 60mL melted margarine
- 15mL fresh lemon juice
- 75mL sugar
Method
- Preheat oven to 425°F. Lightly greas a 12 cup muffin tin.
- Mix together flour, baking powder, salt, and sugar in large mixing bowl and set aside.
- In medium mixing bowl, mix together egg, lemon rind, milk, and 125mL of melted margarine.
- Add blueberries to flour mixture, tossing to coat with flour and make a well in dry ingredients.
- Add liquid ingredients to dry ingredients and stir with a fork 12-15 times or until just blended.
- Spoon into muffin tins, filling 12 cups.
- Bake for 20-25 minutes or until golden brown and a toothpick inserted in the centre comes out clean.
- Place 75mL of sugar in small dessert bowl.
- Place 60mL of melted margarine and lemon juice in a seperate bowl.
- Remove muffins from over, carefully loosen around edges. Immediatly dip tops into margarine micture, then into sugar.
- Cool on a cooling rack.

Yum!, blueberry muffins, possibly the best muffins around. Will be trying this out, they won’t last long though
