Here’s a recipe for cornbread stuffing that has a sausage flavor to it. This makes a great side dish!

Ingredients:

  • 1 stick unsalted Butter
  • 6 strips Bacon, diced fine
  • 1 medium sized Spanish Onion, chopped coarse
  • 2 stalks Celery, chopped coarse
  • 1 Green Bell Pepper, cored & chopped coarse

Spice Mix:

  • 1 tsp Kosher Salt
  • 1 tsp cracked Black Pepper
  • 1 tsp dry Basil
  • 1/2 tsp dry Thyme
  • 1/2 tsp Paprika
  • 1/2 tsp dry Mustard
  • 1 lb Sweet Italian Sausage Meat
  • 1 cup canned Chicken Stock or Broth
  • 1/4 cup flat Italian style Parsley, chopped fine
  • 5 cups crumbled Cornbread
  • 2 1/2 cups stale white bread crumbs

Method:

Preheat oven to 350 degrees. Assemble the Spice Mix in a small bowl and set aside.
In a large skillet, over high heat, melt the butter. Add the bacon and let this cook down for 4 minutes. Stir the bacon to prevent it burning. Add the onion, celery and green pepper. Stir well and cook down for 5 minutes or until onions begin to soften and turn clear. Add the Spice Mix, stir well and cook for 2 minutes. Reduce heat to medium. Add the Italian Sausage meat and cook this for 12 minutes; be sure you break up any clumps of meat in the skillet as the sausage cooks. Add the chicken stock, stir well and let this cook for 6 minutes. Remove skillet from heat and pour the skillet mixture into a large bowl. Stir in the crumbled cornbread and white bread crumbs. Make sure all ingredients are completely blended. Using a non-stick cooking spray, spray down the inside of a casserole dish. Place the stuffing in the casserole dish and place it in the oven. Bake stuffing for 40 minutes. Serves 4.
