Cranberry Lemon Bread

This bread is too good to have only on the holidays. You will want to serve it all year round.

1 cup sugar

1 Tablespoon grated lemon peel

3/4 cup water

1/3 cup lemon juice

2 Tablespoons vegetable oil

2 eggs

2 cups flour

1 1/2 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon baking soda

1 cup fresh cranberries

1 cup chopped walnuts

In a large bowl, combine sugar, lemon peel, water, lemon juice, oil and eggs.  Beat until smooth.  Add flour, baking powder, salt, and baking soda.  Stir just until moistened.  Stir in cranberries and walnuts.  Pour into greased 9×5 loaf pan.  Bake at 350 degrees for 50 to 60 minutes or until a toothpick inserted into the center comes out clean.  Cool for 10 minutes.  Remove from pan to finish cooling.  Once bread is cool; wrap and store in the refrigerator.

    Oh wow this recipe sounds great. I’ve had orange cranberry bread before but never lemon cranberry bread. I can’t wait to try this recipe out. Thanks for sharing.
