1 and 1/3 cups unbleached flour

3 tablespoons brown sugar

(optional, can replace with 3

tablespoons honey

whipped into oil)

2 teaspoons cream of tartar

1 teaspoon baking soda

1/4

teaspoon salt

3 tablespoons sesame seeds

1 and 1/3 cups oat flour or

replace with rolled oats blended to a powder

1/2 cup canola oil, chilled (replaces traditional margarine)

1/2 cup currants

1/2 cup tofu

or soy or

nonfat milk

2 teaspoons additional milk of choice

1. Preheat oven to 375°F. Coat a large baking sheet with nonstick cooking spray.

3. Blend oats to a powder (if oat flour is not available). Add sesame seeds and oat

4. Combine oil and vanilla extract. If using honey for the sweetener, whisk it into the

oil until it is dissolved.

5. Pour the oil mixture into the dry ingredients and toss with a fork until texture

resembles coarse crumbs. Stir in the currants. Add

6. Working on a lightly floured board with well-floured hands, pat the dough to a

circle about 1/2inch thick. Using a 21/2-inch fluted biscuit cutter, cut rounds from

the dough and place them on the prepared baking sheet. Gather the scraps into a

7. Place the scones on the baking sheet. Brush the tops of the scones with the

remaining 2 teaspoons of milk.

8. Bake for 12 to 15 minutes, or until golden. Transfer the scones to a wire rack.

2 teaspoons brown sugar (optional)

cinnamon stick

tablespoon grated lemon peel

1. In a I-quart saucepan, combine all ingredients. Bring to a boil over medium heat.

Reduce the heat to low. Simmer, stirring frequently, for 30 minutes, or until the

mixture is thick. Remove and discard the cinnamon stick. If you choose to blend

2. Cool, then transfer to a bowl or jar. Store, tightly covered, in the refrigerator. Serve
