Delicious Ginger Pumpkin Muffin Recipe

Try this healthy holiday muffin all year round. Easy to make and extremely healthy. Avoid packing on extra holiday pounds with this gem.

Ingredients

  • 1 cup of all purpose flour
  • 1 teaspoon of baking soda
  • 1 large egg
  • 1 tablespoon finely grated fresh ginger
  • 1 tablespoon melted butter
  • 2 tablespoons canola oil
  • 1/3 cup brown sugar
  • ¾ cup fat free milk
  • 1-1/4 cup of canned pumkin
  • 1/3 cup sliced walnuts
  • 1 cup bran cereal
  • ¼ teaspoon baking powder
  • ¾ teaspoon pumpkin pie spice

Method

Preheat oven to 400 degrees. Lightly spray muffin pan with PAM. Mix flour, baking soda, pumpkin pie spice, salt, and baking powder in a bowl. Stir in cereal and nuts. In another bowl mix pumpkin, milk, brown sugar, ginger, butter, oil, and egg together. Add flour mixture and fold. Try not to stir too much. Evenly divide among the muffin cups. Bake for 17 to 20 minutes or untiul a tooth pick inserted in the center of the muffin comes out clean.

    Ange – I have just added this recipe to an article of mine as it was very fitting, using the new Triond link service. It would be nice if this cross linking could add benifit for us all. I have not yet tried them out but I will do on next Wednesday bake day.
