Different Recipes for Pastry Dough

Here I am going to share some of the ways my mom makes the pastry on her famous apple pie. The recipes will be five minute pastry, boiling water pastry and flaky pastry.

Five minute pastry

2 Cups flour

2/3 teaspoon salt

1 teaspoon baking powder

2/3 cup shortening

1 egg yolk

1/4 cup ice water

Sift together  flour, salt, and baking powder.  Cream shortening in a bowl as for cake. As soon as it is light and fluffy add the sifted dry ingredients, mixing in with a knife, not touching at all with the hands. Beat egg yolk, combine with ice water and use to moisten pastry. Roll out once on floured board.

Boiling pastry crust

2/3  cup  shortening

1/2 cup boiling water

2 cups flour

1/2 teaspoon salt

1/2 teaspoon baking powder

Pour boiling water over shortening in mixing bowl and beat with fork until creamy. Add sifted dry ingredients and blend thoroughly. Chill before rolling. If convenient the pastry should be made day before you plan to use it.

Flaky pastry

2 cups flour

2/3 teaspoon salt

3/4 to 1 cup shortening

ice water

Sift flour and salt together into a bowl and work in shortening with two knives. Add water to form a dough, cutting and mixing all thoroughly while adding water. Roll out on flour board, rolling only lengthwise and keeping the edges straight;(lengthwise as a sheet of paper would be folded into a business envelope, turn it half around and roll again. Repeat the folding and rolling twice chill before baking  folding and rolling produce flakiness

    Wow – I love these different recipes for pie crust. I have one which I have used for a long time, but these sound very easy and like they would be perfect for any pie!
