Easter Cornmeal Muffins
These muffins go great with that Easter salad and ham.
Easter Cornmeal Muffins
- 1 cup flour
- 1 cup yellow cornmeal
- 1/3 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup cream-style corn
- 1/3 cup butter or margarine
- 1 egg
- In a large bowl, combine all dry ingredients.
- Make a well in the center and add all remaining ingredients.
- Stir until lightly mixed.
- Spoon into 12 greased muffin tins.
